Sunchoke (Helianthus tuberosus), also known as Jerusalem artichoke, is a well known and loved native, edible perennial plant. It is in the sunflower family and grows 5’+ tall producing yellow blooms in late summer. The tubers are delicious with a sweet nutty flavor and can be harvested in fall or spring. Note, this plant will spread through it’s underground rhizomes and should be planted in an area with room to roam.
